Breakfast Challenge Update – and more recipes

I have pretty much kicked the cereal habit! So happy to be away from so much refined sugar in the mornings! I did have cereal maybe twice this month. I allowed myself to cheat once a week. Making my breakfasts has been a lot more time-consuming, so some days, it’s just easier to pour a bowl of cereal! And that’s ok.

I have not been making smoothies every day. I have been trying a few different things. My favorite has been waffles! I have 2 recipes to share with you. I bought some 100% pure maple syrup from trader joes and I do use it on my waffles. Maple syrup has natural sugar in it, but you do want to be careful to not over-do it because it can still spike your blood sugar if you have too much.

Banana Waffles:

I have been making these for Logan for a while now. I have not been a fan (although thankfully Logan is). But, when I tried them with maple syrup and some butter – yum! They are so good for you, and I am also able to kill 2 birds with one stone and feed him and me.

1 banana

handful of spinach

2 eggs

1 cup of oatmeal

1 tsp vanilla

Put in a blender to make your batter. Make sure your waffle iron is nice and hot and make your waffles!

*I double this recipe on mornings I use it for myself along with Logan.

Sugar-free Waffles

I use a recipe I got from another blog. You can find it here. I just changed 2 things. I didn’t use any grape seed oil and I used whole wheat flour as I am not trying to stay away from gluten.

So, hopefully this helps some of you. And don’t worry if you have fallen off the wagon. Get back up and try again! Your body will thank you!
